Chicken Fajita Quesadillas

These 5-ingredient quesadillas take just 10 minutes to make. Using pre-sliced onions and peppers plus a taco seasoning blend helps keep the ingredient list (and prep time) short. If you like a little heat, use pepper Jack cheese in the filling.

  • 1 tablespoon extra-virgin olive oil

  • 1/2 cup sliced bell peppers and onions, coarsely chopped

  • 4 ounces shredded cooked chicken

  • 1 teaspoon reduced-sodium taco seasoning

  • 2 (8-inch) whole-wheat tortillas

  • 1/2 cup shredded Mexican cheese blend

Direction

  1. Heat oil in a large nonstick skillet over medium-high heat. Add peppers and onions; cook, stirring occasionally, until crisp-tender, about 2 minutes. Add chicken and taco seasoning; cook, stirring occasionally, until the chicken is heated through, about 2 minutes. Transfer the mixture to a small bowl. Wipe the skillet clean.
  2. Place tortillas on a cutting board. Sprinkle each tortilla with 1/4 cup cheese. Spread about 1/2 cup chicken mixture across the bottom half of each tortilla and fold the top half over the chicken.
  3. Coat the skillet with cooking spray and heat over medium heat. Add the quesadillas and cook until the tortillas are browned and the cheese has melted, about 1 minute per side.
